Pomegranate Rosemary Mocktail: A 5-Minute Festive Fizz
Approx. 6 min read
Pomegranate Rosemary Mocktail Recipe
The balance is what makes this one special: tart pomegranate, a gentle ginger kick and just enough soda water to keep it crisp rather than overly sweet. A lightly rubbed rosemary sprig brings fresh herbal fragrance to every sip. No shaker, muddled leaves or homemade rosemary syrup needed.
Recipe details
- Prep time: 5 minutes
- Difficulty: Easy
- Serves: 1
- Glass: Large wine glass or highball
- Tools: Jigger or measuring jug and a long spoon
- Taste: Tart and fruity, with fresh rosemary and a gentle ginger kick
Ingredients for one glass
- 90 ml (3 oz) chilled pomegranate juice, preferably 100% juice with no added sugar
- 15 ml (0.5 oz) fresh lemon juice, or start with 5–10 ml (1–2 tsp) if your pomegranate juice is very tart
- 60 ml (2 oz) chilled alcohol-free ginger beer
- 60 ml (2 oz) chilled soda water
- 1 small fresh rosemary sprig
- Ice cubes
- A teaspoon of pomegranate seeds or a thin lemon wheel, optional
- 1 tsp (5 ml) maple syrup, optional, only if the juice is too tart
How to make it
- Rub the rosemary sprig gently between your palms to release its aroma. Put it in a large wine glass or highball and press it once lightly against the side with a spoon. Do not crush the leaves.
- Add the pomegranate juice and lemon juice. Swirl the rosemary sprig through the still liquid for about 10 seconds. For a more noticeable herbal note, leave the lightly pressed sprig in the juice for 1–2 minutes.
- If the juice mixture is unusually sharp, stir in the optional maple syrup until blended. Fill the glass with ice, then add the chilled ginger beer and soda water.
- Stir once, very gently. Add a few pomegranate seeds or a lemon wheel if you like, and serve while the bubbles are lively.
Quick tip: Taste your pomegranate juice first. If it is sharp, start with half the lemon. Ginger beer adds some sweetness, so only stir in the optional maple syrup if the drink still needs softening. The half-ginger-beer, half-soda combination keeps the spice without making the glass too sweet.
How to Get Rosemary Flavour Without Making Syrup
A quick rub and swirl mostly release rosemary aroma — the fresh scent you notice as you lift the glass. That is different from a deeply infused rosemary flavour, and it is enough for a lovely, gentle finish.
For a clearer herbal note, press the sprig lightly once against the glass, then let it rest in the pomegranate-lemon mixture for 1–2 minutes before you add ice and bubbles. Avoid crushing or chopping the leaves: tiny needles can end up in the drink, and too much bruising can taste harsh. The pomegranate should still be the star.
Make It Sweeter, Drier or More Gingery
- For a stronger ginger finish (often a little sweeter): Use 90 ml (3 oz) ginger beer and 30 ml (1 oz) soda water instead of equal measures.
- For a lighter, drier finish: Use 30 ml (1 oz) ginger beer and 90 ml (3 oz) soda water. Do not automatically add more lemon — the pomegranate may already be tart enough.
- For a festive citrus twist: Add a strip of fresh orange peel alongside the rosemary. Squeeze the peel gently over the glass first to release its fragrant oils.
- If it tastes too sharp: Reduce the lemon in your next glass, or stir in 1 tsp (5 ml) maple syrup. Add just enough to keep the fruit tasting fresh.
Make one small change, then taste. The goal is a bright, festive sip, not a glass of syrupy fruit juice.
Make Four Glasses for a Festive Toast
This is the sort of welcome drink you can have nearly ready when friends arrive. Prepare the still base ahead, but keep the ginger beer and soda water chilled and separate until the last moment.
Ingredients for four
- 360 ml (12 oz) chilled pomegranate juice
- 60 ml (2 oz) fresh lemon juice, or 20–40 ml (4–8 tsp) if the pomegranate juice is very tart
- 240 ml (8 oz) chilled alcohol-free ginger beer
- 240 ml (8 oz) chilled soda water
- 4 small fresh rosemary sprigs
- Ice and optional pomegranate seeds or lemon wheels
- Up to 4 tsp (20 ml) maple syrup, optional, if needed to soften very tart juice
How to serve four
- Mix the pomegranate and lemon juices in a covered jug and chill for a few hours on the day you plan to serve. If the juice is very tart, use the smaller lemon quantity. You can stir in a little maple syrup if needed, remembering that the ginger beer will bring some sweetness too.
- Gently rub one rosemary sprig for each glass. Divide the juice mixture between the four glasses — about 105 ml (3.5 oz) per glass with the full lemon quantity and no sweetener. Swirl the rosemary for 10 seconds, or let it sit for 1–2 minutes for a more herbal flavour.
- Add ice to each glass. Top each with 60 ml (2 oz) ginger beer and 60 ml (2 oz) soda water. Stir gently, garnish and serve while sparkling.
Quick Questions
Can I make this pomegranate mocktail ahead of time?
Yes. Mix the pomegranate and lemon juices earlier in the day and chill them in a covered jug. Add the fresh rosemary, ice, ginger beer and soda water just before serving. The finished drink tastes best while it is freshly fizzy.
Can I use sparkling water instead of ginger beer?
Absolutely. Replace the 60 ml (2 oz) ginger beer with another 60 ml (2 oz) soda water. The result is less sweet and less spicy, with more focus on pomegranate and rosemary. Taste before serving, especially if your juice is very tart.
Is this mocktail completely alcohol-free?
It can be. Choose a ginger beer clearly labelled alcohol-free; if you need strictly zero alcohol, look for a 0.0% label. Some fermented or alcoholic ginger beers are not suitable for a zero-alcohol mocktail.
Do I need rosemary syrup?
Not for this version. Rubbing the fresh sprig brings out its aroma, while a short 1–2 minute rest in the still juice gives you a little more herbal flavour. There is no saucepan or homemade rosemary syrup to prepare.
One pretty glass for a quiet evening or four for a festive table — either way, this is an easy little drink worth sharing.
