Pandan Margarita: The Green Cocktail With Vanilla, Coconut & Lime Notes
Approx. 6 min read
A Margarita that tastes familiar — until the pandan arrives
The first sip still feels like a Margarita: bright lime, clean tequila and a little orange. Then the pandan shows up with a softer aroma that can feel vanilla-like, slightly nutty and almost coconut-like without making the drink creamy.
That contrast is what makes this one fun. It is tropical, but still sharp. Unusual, but not difficult. Depending on the pandan syrup you use, the color can range from soft leafy green to brighter jade.

Love My Drink tip: Pandan syrups vary a lot in sweetness and intensity. If yours smells very strong or looks extremely vivid, start with 10 ml (0.35 oz) instead of 15 ml and adjust the next round.
How much pandan syrup should you use?
Too little pandan disappears behind the lime. Too much can make the drink overly sweet and cover the tequila.
- 10 ml (0.35 oz): Subtle. Mostly classic Margarita with a light aromatic finish.
- 15 ml (0.5 oz): Balanced. Pandan is easy to notice, but lime and tequila still lead.
- 20 ml (0.7 oz): Bold and sweeter. Best if your syrup is lightly sweetened rather than very concentrated.
For a first try, 15 ml is the sweet spot. It gives you the pandan moment without turning the drink syrupy.
What does pandan taste like in a Margarita?
Pandan does not literally taste like vanilla or coconut, but its aroma often points in that direction. Think soft vanilla, a little nuttiness, a hint of coconut and something gently floral or toasted underneath.
Fresh lime keeps those warmer notes bright. Tequila blanco adds a clean agave edge, while orange liqueur connects the lime and pandan without taking over.
The result is less like a dessert cocktail and more like a classic Margarita with a tropical accent. Looks like effort. Isn't.
Pandan syrup or pandan extract?
Pandan syrup is the easiest option because it adds flavor and sweetness at the same time. It is also much easier to measure consistently at home.
Pandan extract can work, but it is not a direct one-for-one replacement. Some extracts are extremely concentrated, and sweetness varies from product to product. If you use extract, follow the product directions, add it cautiously and sweeten the Margarita separately if needed.
Do not worry if your drink is not neon green. Some syrups are vivid, while homemade or less-colored versions can look much softer. Flavor matters more than color.
Three easy Pandan Margarita variations
Coconut Pandan Margarita
For a stronger tropical direction, use a coco-pandan syrup or add a small splash of coconut water. Keep it light rather than creamy so the lime and tequila still feel fresh.
Spicy Pandan Margarita
Add one thin jalapeño slice to the shaker. Start small. The green chile heat works surprisingly well with pandan's soft aroma and sharp lime.
Frozen Pandan Margarita
Want the slushy version? Use the texture method from our Frozen Margarita recipe, then replace the added sweetener with pandan syrup. Start with 10–15 ml (0.35–0.5 oz) and adjust from there.
The best rim and garnish
A light half-salt rim is the easiest choice. It keeps the Margarita feeling familiar and gives you the option of a salty sip or a clean one. If your rims usually fall off or turn messy, our guide to rimming a cocktail glass with salt or sugar shows the simple technique.
For garnish, a lime wheel is enough. A fresh pandan leaf looks beautiful if you can find one, but the green drink already does most of the work.
Pandan Margarita FAQ
What tequila is best for a Pandan Margarita?
Tequila blanco is the easiest choice. Its fresh agave character stays clear next to lime and pandan without adding too much oak or vanilla of its own.
Can I make a Pandan Margarita without orange liqueur?
Yes, but it will taste less like a classic Margarita. Keep the tequila and lime the same, then use the pandan syrup to bring sweetness gradually. Do not automatically add more syrup just to replace the missing volume.
Can I make it ahead of time?
You can combine the tequila, lime juice, orange liqueur and pandan syrup a few hours ahead and keep the mixture chilled. Shake each serving with fresh ice just before pouring so the drink is properly cold and diluted.
If you want something much simpler next, our guide to what to mix with tequila has quick combinations with grapefruit, pineapple, ginger beer, sparkling water and more.
Final sip
The Pandan Margarita is green, bright and a little unexpected, but the familiar tequila-and-lime base keeps it easy to love. Start with 15 ml of pandan syrup, keep the lime fresh and let the pandan bring the tropical twist.
