Apple cider punch for 8: the recipe
This is a cold, fizzy apple punch with orange, lemon and a gentle ginger finish. Use still, non-alcoholic apple cider or cloudy apple juice, not hard cider or apple cider vinegar.
Recipe details
- Prep time: 10 minutes with chilled ingredients; allow extra time to chill if needed
- Difficulty: Easy; no shaker or homemade syrup needed
- Makes: 1.8 litres, or eight 225 ml servings, before ice or optional spirits
- Taste: Apple-forward, fruity, citrusy and gently fizzy
- Tools: Measuring jug, spoon, knife and a 2.5-3 litre pitcher or punch bowl
- Glass: Tumblers around 400 ml, with room for ice
Ingredients
Use the metric quantities for the stated yield. US fluid-ounce equivalents are rounded.
- 1,000 ml still, non-alcoholic apple cider or cloudy apple juice (33.8 US fl oz), pasteurised, unspiced and chilled
- 200 ml orange juice (6.8 US fl oz), pasteurised and chilled
- 100 ml freshly squeezed lemon juice (3.4 US fl oz), strained
- 500 ml ginger ale (16.9 US fl oz), well chilled
- 1 small apple and 1 small orange, thinly sliced just before serving
- Ice cubes, for the glasses
- Optional, per cocktail glass only: 30 ml bourbon or gold rum (about 1 US fl oz), kept separate from the punch
How to make it
- Wash the fruit and make sure the juices and ginger ale are well chilled.
- Stir the apple cider, orange juice and lemon juice together in a pitcher or covered container. You now have 1.3 litres of still base. Refrigerate until serving.
- Just before serving, pour the cold base into your pitcher or punch bowl if needed. Add the ginger ale and stir gently. Taste before adjusting.
- Add a few apple and orange slices to the bowl, saving the rest for the glasses. Set out tumblers and ice, then serve either way below.
Keep the ice in the glasses, not the shared bowl, so the punch stays cold and bright without getting watery. A few fruit slices make it feel like a party.
One bowl, two ways: alcohol-free or spiked
The shared bowl stays alcohol-free, and guests choose how to enjoy their glass. No second pitcher, no extra batch to mix.
- Alcohol-free glass: Fill a tumbler with ice, pour in 225 ml punch and add an apple slice.
- Bourbon or rum glass: Measure 30 ml bourbon or gold rum into a roomy tumbler, add ice and top with 225 ml punch. Stir gently.
Let everyone know the bowl is alcohol-free. Keep the spirits separate and add them only when someone asks, never to the communal punch.
Bourbon or gold rum both work. Pick one bottle you already enjoy; there is no need to buy both.
Make it ahead without losing the fizz
Mix the three juices on the day of your gathering or up to 24 hours ahead, unless the juice labels call for a shorter time. Cover and refrigerate the base. Keep the ginger ale sealed and cold until serving.
Add the bubbles and freshly sliced fruit just before guests pour their first glass. That is the secret to a punch that still tastes freshly made.
Guests arriving at different times? Start with 650 ml base and 250 ml ginger ale for four servings. Refrigerate the remaining base and add the other 250 ml ginger ale when you need four more. No flat punch waiting on the table.
Our guide to batching drinks without making them watery explains the same approach for other party drinks.
Keep the batch chilled
Choose pasteurised cider and orange juice, in line with FDA juice-safety guidance. Keep the base at 4°C (40°F) or colder. At the table, set the bowl in an ice bath or serve smaller batches and refrigerate the rest. Following FDA buffet guidance, discard perishable punch left without cold holding for more than two hours, or one hour above 32°C (90°F).
Keep it fresh, not too sweet
Taste after adding the ginger ale. Apples and mixers vary, and this recipe needs no added syrup.
- Prefer a less-sweet batch? Swap 250 ml ginger ale for 250 ml cold soda water. The batch still makes 1.8 litres.
- One glass tastes too sweet? Add 15-30 ml chilled soda water to that serving and stir gently.
- One glass tastes too sharp? Add 15 ml apple cider, stir and taste again. There is no need to change the whole batch.
- Want a stronger ginger flavour? Try non-alcoholic ginger beer instead of ginger ale. Some versions are just as sweet, so check the label.
Apple cider punch FAQ
Is the apple cider in this recipe alcoholic?
No. In some countries, cider usually means an alcoholic drink. For this bowl, use still, non-alcoholic apple cider or cloudy apple juice, not hard cider.
Can I use cloudy apple juice instead?
Yes. Plain, pasteurised cloudy apple juice is ideal. Clear apple juice works too, but the punch will look less cloudy. Avoid concentrated or sweetened apple drinks unless prepared as directed.
Can I make the punch the night before?
Yes. Cover and chill the juice base overnight. Keep the ginger ale separate, then add it with fresh fruit slices just before serving.
Can I double it for 16 servings?
Yes. Use 2 litres apple cider, 400 ml orange juice, 200 ml lemon juice and 1 litre ginger ale. That makes 3.6 litres before ice and additions: sixteen 225 ml servings. Split it between two pitchers and finish each with bubbles when needed.
Eight servings means one round for eight guests, not a complete evening's drinks. For the wider shopping plan, see our guide to planning party drink quantities, and put out drinking water too.
